My recipe for smoking whitefish is pretty easy. Clean them, rinse them, soak them 12 hours in a heavy salt brine, about 3 cups salt , one and a half cups sugar, in one gallon of clean water. Mix until all the sat and sugar is dissolved. ( the sugar is to neutralize the salt taste)
Then remove from brine and rinse with clean water and lay on rack in smoker. I always used apple sawdust (chainsaw, sawdust) for mine. Smoke 12 hours. You will have to replenish the chips or sawdust occasionally. You won't be able to stop at one, so you better fill the smoker, also, they smoke better if they are fresh.
Hope this helps.

| I didn't go today but I did go Friday and it was good,my catching wasen't!I went 1 for 7,really bad, marked alot of fish,me and my buddy each got one, mine was a natural whitey also,no fins clipped.I was pretty happy about that.We couldn't hook them good,i don't know was was wrong with us but I guess thats fishing.I lost a really big whitey at the hole I couldn't get his head thrue he kept coming in on an angle and then he turned the other way and I pulled up a lure with no whitey!I just laughed and put it back down.It was one of those days. Can't wait to get back out tomorow, hopefully my average will be better.
