Your best bet, since there are so many rivers to fish, are to find two that you like and are close to your home and learn them. Check the regulations to see what stretches are open seasonally and what stretches are open year around. Check them out in the summer when levels are low, and see where the channels and deep pockets lay. This gives you a heads up when the rivers are higher and/ or stained.
To answer your question regarding year round open areas,
Thornbury: About 100 meters up from the mouth is a sign with a rope strung accross the river, fish below that line. That is the year round open stretch.
Notty: From the mouth of the Boyne downstream to Georgean Bay is open year round. Note, only the nottawasaga is open, non of the tribs to the notty are open right now. Also, catch and release only between the mouth of the Boyne to the mouth of the Pine.
